What is Professional Cookery

This programme is designed to be delivered as a nine month immersion programme, integrating theory and practice. It has been developed, in conjunction with the French Culinary Institute in New York, to provide a relevant professional qualification for those who wish to embark on a career in professional cookery. This premier programme offers high quality, hands-on education where both theory and practical elements are delivered in both a college and industry environment. As part of the programme, participants work in industry in a professional kitchen 2 days per week and attend the Institute 3 days per week for 6 months. To successfully complete the programme a period of 3 months intensive work based learning is required directly after the 6 month college period.

The college boasts a self-contained Hotel, Culinary and Tourism Department, with five modern kitchens; purpose built demonstration kitchen theatre, a training restaurant and bar. Other Information

Many past graduates gained full time employment following the programme in their respective work based learning establishments and some have opened their own successful food businesses such as coffee and pastry shops and some have also become artisan food producers. Students are also afforded the opportunity to partake in both national and international familiarisation trips, food industry competitions, and are introduced to many industry experts through guest lecturers within the programme.

Entry Requirements

The course is open to all EU students and non EU students who possess a stamp 4 visa. Applicants must be aged 17 in the year of entry. This intensive programme has been developed specifically for those who wish to embark on a career in professional cookery. While prior professional cookery experience is not a requirement, a passion for food and a mature attitude are essential.


Progression Level 7

Graduates who have successfully completed the Advanced Certificate in Professional Cookery and gained one years full time work experinece may progress ont Bachelor of Arts in Culinary Arts (Level 7) which is currently delivered on a part-time basis.

Applications are made directly to the Hotel, Culinary and Tourism Department at IT Tralee. It is pre requisite that the candidate has secured a work based learning establishment prior to applying for the programme.
