Feb 20, 2012 - German-Based Chefs delivered a series of Culinary Master Classes
Top German-Based Chefs Liam McMahon and Thomas Kraus delivered a series of Culinary Master Classes to 2nd year Culinary Arts students at IT Tralee last week. And on Wednesday night, the chefs and the students cooked up a storm for the 80 guests, with a Six-course meal of European delights.
The extensive Menu included, A selection of starters which included a veal terrine, a prawn and crab tian and a scallop wrapped in smoked bacon. This was followed by a cold seafood consomme with a salmon trout ravioli and to clear the palate there was a Lime sorbet served with a Guinness balsamico. The Main course was a Trio of Pigeon. This was followed by a cheese course and to finish the dessert was a variation of chocolate which included a trio chocolate mousse, a chocolate parfait and a rich chocolate torte.
According to T.J O Connor, Section Head of the Hotel, Catering and Tourism Department the visit and the Master Classes are a great addition to the students learning experience at IT Tralee and it is now in its seventh year.

Liam who is originally form Dublin has been in Germany for over 40 years now, and over his time in ITT has always been very impressed with the facilities and the standard of the students. He is a member of Euro-Toques and Has taught German Master Chefs and been a member of German Master Chefs Judging Panel for over 30 years. Thomas Kraus is the Chef Proprietor of the highly acclaimed Hotel Schachener Hof in Lindau, http://www.schachenerhof-lindau.de/ , he is also a member of the German Master Chef Judging Panel, Thomas has also held a Michelin star.
According to T.J the feedback from the students has been excellent and indeed over the years past graduates from IT Tralee have gone to work with Liam in Germany. A new addition to this years programme is that one student will be chosen to receive a scholarship to work in Germany with Liam for two weeks, an internal pastry competition will be organised and the winner of this will avail of this excellent oppurtunity. This event give us the opportunity to showcase our excellent facilities and it is the support and commitment of the Hotel and Catering and Tourism Department Staff that make such events possible.
