Bryan O’ Sullivan joined the IT Tralee in 2018 following a long distinguished career in the Hospitality Industry holding posts of General Manager in 3 and 4 star hotels and most recently as HR consultant to 4* hotels in Kerry . Bryan lectures in both practical food and beverage modules within the department along with other subjects such as Front Office and Customer Relationship Management and Finance for Hotels.
Dan Browne has worked a lecturer in Culinary Arts in the IT Tralee for 10 years. Dan has a Masters in Culinary Arts Management and a BA (Hons) in Culinary Arts from DIT with a Nutrition Major. He has worked as a chef in restaurants, hotels, event centres, food product development centres and as a private chef in countries including Ireland, England, USA, Australia, Germany and Greece.
Maurice J. O’Brien has worked in the IT Technology Tralee as a lecturer for over 12 years and has worked in industry for over 30 years. He lectures across several disciplines including culinary arts, business and food sciences. He specialises in Food Product Design, Innovation and Enterprise, Culinary Operations Management, Food Sustainability and Futures, Food Tourism, Research Methods, Food Science, and Food Safety Management.
TJ O’ Connor has been working in the hospitality industry for 32 years he trained as a chef at the Institute of Technology Tralee in 1987 and since then he has worked both in Ireland and internationally. He has been a Culinary Lecturer at the Institute of Technology Tralee since 2001 and became a Senior lecturer in 2018. He has also completed a Masters in Professional Hospitality and Tourism Management.
