The Culinary Arts honours degree course provides a pathway for creative employment opportunities within all aspects of the food industry. This is a course that reflects developments in both national and international Culinary Arts education. It combines practical reflective classes in kitchens and restaurants with an in depth theoretical knowledge-base and the development of communication, strategic thinking, problem solving and personal skills in its participants.

This honours degree programme reflects the strong partnership between education, the individual student and the hospitality and food industries.

  1. Food Blogging with Digital Video Production
  2. Food Tourism and Regional Development
  3. Food Globalisation
  4. Contemporary Culinary Trends
  5. Independent Project
  6. Strategic Culinary Management

IT, Tralee is located within the premier tourism hub of Ireland, which facilitates strong industry links and a professional network of employment opportunities. The college boasts a self-contained Hotel, Culinary and Tourism department, with five modern kitchens; purpose built demonstration kitchen theatre, a training restaurant and bar. A key strength of the department is the staff to student ratio which creates a supportive learning environment.

All staff come from a varied food industry background, which provides the opportunity to link both the theory and practice of culinary arts. The department also offers a number of unique scholarship exchange programmes, which brings an international dimension to this programme.
